Ingredients

  • 100 grams Chickpea flour (Besan)
  • 120 ml Water
  • 50 grams Grated zucchini
  • 30 grams Chopped spinach
  • 1 Green chili, finely chopped
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Coconut oil
  • 2 tablespoons Fresh coriander leaves, chopped
  • 0.5 teaspoon Ginger, grated

Directions

Step 1

In a medium-sized mixing bowl, combine the chickpea flour, ground cumin, turmeric powder, and salt.

Step 2

Slowly add the water into the bowl, whisking continuously to form a smooth, lump-free batter.

Step 3

Add grated zucchini, chopped spinach, finely chopped green chili, grated ginger, and chopped fresh coriander leaves into the batter. Mix well to incorporate all ingredients evenly.

Step 4

Heat a non-stick pan or skillet over medium heat and grease it lightly with a little coconut oil using a brush or paper towel.

Step 5

Ladle a small portion of the batter onto the center of the skillet and spread it gently in a circular motion using the back of the ladle to form a thin and even crepe.

Drizzle a few drops of coconut oil around the edges of the cheela and let it cook for 3-4 minutes until the edges begin to lift and the bottom is golden brown.
