Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol sweetener
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon xanthan gum

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.

Step 2

In a large bowl, combine almond flour, coconut flour, erythritol sweetener, and ground cinnamon.

Step 3

Add melted butter and vanilla extract to the dry ingredients and mix until crumbly.

Step 4

Press about 2/3 of the crumbly mixture firmly into the bottom of the prepared baking dish to form a crust.

Step 5

In another bowl, mix the berries with lemon juice and xanthan gum until well coated.

Step 6

Evenly spread the berry mixture over the crust in the baking dish.

Step 7

Sprinkle the remaining crumbly mixture over the top of the berry layer.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the fruit is bubbling.

Step 9

Remove from oven and allow it to cool completely in the pan for at least 15-20 minutes before slicing into bars.
