Ingredients

  • 2 cups Mixed berries (such as strawberries, blueberries, raspberries)
  • 2 tablespoons Swerve confectioners' sweetener

  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Xanthan gum (optional, for thickening)

Directions

Step 1

Rinse and gently pat dry the mixed berries. If using strawberries, hull and cut them into quarters.

Step 2

In a medium saucepan, combine the mixed berries, Swerve confectioners' sweetener, and water.

Step 3

Place the saucepan over medium heat. Stir the mixture occasionally until the sweetener dissolves and the berries start to release their juices, about 5 minutes.

Step 4

Add the lemon juice and vanilla extract to the saucepan. Stir to combine.

Let the mixture simmer for another 5 minutes, stirring occasionally, until the berries are soft and the sauce has thickened slightly. If you prefer a thicker compote, stir in the xanthan gum and cook for an additional 1-2 minutes.
