Wash and peel the beetroot. Grate it using a food processor or grater.
Heat coconut oil in a large pan over medium heat.
Add mustard seeds to the oil. When they start to splutter, add cumin seeds, curry leaves, and slit green chilies. Sauté for about 30 seconds.
Add the grated beetroot to the pan and stir well to combine with the spices.
