Ingredients

  • 250 grams Raw beetroot
  • 150 grams Almond flour
  • 30 grams Coconut flour
  • 80 grams Coconut oil
  • 3 large Eggs
  • 50 grams Erythritol
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9 inch baking pan with parchment paper.

Step 2

Peel and grate the raw beetroots using a fine grater. Set aside.

Step 3

In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt.

In a separate bowl, whisk together eggs, melted coconut oil, erythritol, and vanilla extract until well combined.
