Ingredients

  • 2 pieces Medium beetroot
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 100 grams Feta cheese
  • 2 stalks Green onions
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh mint
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Wash and trim the beetroot, leaving the skin on. Wrap each beetroot individually in aluminum foil.

Step 3

Place the wrapped beetroot on a baking tray and roast in the oven for 40-45 minutes or until tender when pierced with a fork.

Step 4

Remove from the oven and allow to cool slightly. Once cool enough to handle, peel the beetroot and cut into bite-sized cubes.

Step 5

Meanwhile, slice the green onions thinly and roughly chop the fresh parsley and mint.

In a large mixing bowl, combine the olive oil, lemon juice, salt, and black pepper to make the dressing.

Add the beetroot cubes to the dressing and toss to coat well.
