Ingredients

  • 1 whole Medium beetroot
  • 2 tablespoons Olive oil
  • 3 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cauliflower rice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wrap the whole beetroot in aluminum foil and place it on a baking sheet. Roast in the preheated oven for about 35-40 minutes or until it's tender when pierced with a fork.

Once roasted, let the beetroot cool slightly. Peel the skin off and roughly chop it into small chunks.
