Ingredients

  • 2 whole Medium beets
  • 0.25 cup Tahini
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1 clove Garlic
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Chopped fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash and trim the beets, then wrap them individually in aluminum foil.

Step 3

Place the wrapped beets on a baking sheet and roast in the preheated oven for 40-45 minutes or until a fork easily pierces the center.

Once roasted, let the beets cool before handling. Peel the skin off, which should slip off easily.
