Ingredients

  • 2 medium Zucchini
  • 1 pound Beef sirloin
  • 2 tablespoons Coconut oil
  • 1 medium Bell pepper
  • 1 small Carrot
  • 4 ounces Shiitake mushrooms
  • 1 teaspoon Ginger
  • 2 cloves Garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Toasted sesame oil
  • 2 pieces Green onions
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Spiralize the zucchinis to create zucchini noodles and set aside.

Step 2

Slice the beef sirloin thinly across the grain for tenderness.

Step 3

Heat a large wok or frying pan over medium-high heat and add 1 tablespoon of coconut oil.

Step 4

Once hot, add the sliced beef and cook until browned, about 3-4 minutes. Remove from the pan and set aside.

Step 5

Slice the bell pepper into thin strips, peel the carrot and julienne it, and slice the mushrooms.

Step 6

In the same pan, add the remaining tablespoon of coconut oil, then add the ginger, minced garlic, bell pepper, carrot, and mushrooms. Stir-fry for 3 minutes until the vegetables are tender-crisp.
