Ingredients

  • 2 tablespoons coconut oil
  • 1 pound beef sirloin, sliced thinly
  • 1 medium onion, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons Thai red curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tablespoon fish sauce
  • 1 teaspoon Erythritol or preferred keto-friendly sweetener
  • 2 tablespoons lime juice
  • 0.5 cup fresh basil leaves, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon optional: red chili flakes, for heat

Directions

Step 1

Heat the coconut oil in a large skillet or wok over medium-high heat.

Step 2

Add the sliced beef and sear until browned on all sides, about 5 minutes. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the sliced onion, red bell pepper, green bell pepper, garlic, and ginger. Sauté until the vegetables are tender, about 5 minutes.

Step 4

Stir in the Thai red curry paste and cook for 1 minute until it becomes fragrant.

Step 5

Pour in the coconut milk, fish sauce, and sweetener. Stir to combine and let simmer for 2 minutes.

Step 6

Return the beef to the skillet and mix well, coating the beef with the sauce. Cook for another 5 minutes until the beef is fully cooked and the sauce is slightly thickened.

Step 7

Add the lime juice, basil leaves, salt, black pepper, and optional red chili flakes for additional heat. Stir to combine.

Step 8

Simmer for another 2-3 minutes to allow the flavors to meld.

Step 9

Serve hot, garnished with extra basil leaves if desired, perfect as a standalone meal or with a side of cauliflower rice for a complete keto dish.
