Ingredients

  • 2 tablespoons Olive oil
  • 2 pounds Beef chuck roast, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion, diced
  • 4 Garlic cloves, minced
  • 1 medium Carrot, finely chopped
  • 1 medium Celery stalk, finely chopped
  • 28 ounces Crushed tomatoes
  • 1 cup Beef broth
  • 0.5 cup Red wine
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 Bay leaf
  • 0.5 cup Grated Parmesan cheese (optional topping)
  • 0 Zucchini noodles or cauliflower rice (for serving)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Season the cubed beef with salt and pepper, then add to the pot. Work in batches to avoid overcrowding and brown the beef on all sides. Remove and set aside.

In the same pot, add the diced onion, minced garlic, chopped carrot, and chopped celery. Sauté for 5-7 minutes until the vegetables are soft.
