  • 8 cups Beef bone broth
  • 1 pound Beef bones
  • 2 whole Star anise
  • 1 stick Cinnamon stick
  • 4 whole Cloves
  • 2 inches Ginger
  • 1 medium Onion
  • 3 tablespoons Fish sauce
  • 1 teaspoon Erythritol
  • 1 teaspoon Salt
  • 1 pound Sirloin steak
  • 2 packages Shirataki noodles
  • 1 cup Bean sprouts
  • 1 cup Fresh basil
  • 1 cup Fresh cilantro
  • 2 whole Lime
  • 1 whole Jalapeño
  • 3 stalks Green onions
  • 2 tablespoons Sriracha sauce

Directions

Step 1

Begin by preparing the broth. Quarter the onion and slice the ginger into thick slices. Char the onion and ginger directly over a gas flame or in a pan until they are blackened. This will take about 5 minutes.

Step 2

In a large pot, combine the beef bone broth and beef bones. Add the charred onions and ginger, along with star anise, cinnamon stick, and cloves.

Step 3

Bring the mixture to a boil. Once boiling, reduce the heat to low, cover and simmer for about 1.5 to 2 hours.

After simmering, strain the broth to remove solids and return the broth to the pot.

Add the fish sauce, erythritol, and salt to the broth. Adjust seasoning to taste if necessary.

Thinly slice the sirloin steak against the grain. To make slicing easier, slightly freeze the beef for around 15-30 minutes before slicing.

Prepare the shirataki noodles according to the package instructions. Rinse them well under cold water and set aside.

To serve, bring the broth back to a boil. Divide the shirataki noodles equally among the serving bowls. Top with slices of sirloin.

Pour the hot broth over the noodles and beef. The heat will cook the thin slices of steak to perfect doneness.

Garnish each bowl with bean sprouts, fresh basil, cilantro, slivers of jalapeño, and chopped green onions.
