Ingredients

  • 500 g Ground beef
  • 250 g Cremini mushrooms
  • 1 medium Onion
  • 3 Garlic cloves
  • 2 tbsp Butter
  • 100 ml Heavy cream
  • 150 ml Beef stock
  • 150 g Almond flour
  • 50 g Coconut flour
  • 1 large Egg
  • 50 g Grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Fresh thyme leaves
  • 1 tsp Xanthan gum
  • 1 tbsp Olive oil

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Finely chop the onion and slice the mushrooms. Mince the garlic cloves.

Step 3

Heat a tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, cooking until the onion becomes translucent.

Step 4

Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned.

Step 5

Add sliced mushrooms to the beef mixture. Cook until mushrooms are soft, about 5 minutes.

Step 6

Pour in the beef stock and heavy cream. Stir in the fresh thyme leaves, salt, and pepper. Let the mixture simmer for 10 minutes.

Step 7

Sprinkle the xanthan gum over the cooking beef and mushroom mixture and stir thoroughly to thicken.

Step 8

In a large bowl, combine almond flour, coconut flour, Parmesan cheese, and 1/2 teaspoon salt.

Step 9

Whisk the egg and combine it with the flour mixture to form a dough.

Step 10

Press the dough into a greased pie dish to form the crust base and sides.

Step 11

Spoon the beef and mushroom filling into the crust.

Step 12

Dot the top with small pieces of butter for added richness.

Step 13

Place in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown.

Step 14

Remove from oven and allow to cool slightly before serving.
