Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck stew meat
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium, chopped onion
  • 4 cloves, minced garlic
  • 2 stalks, chopped celery
  • 1 large, chopped carrot
  • 8 ounces, sliced mushrooms
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon, chopped fresh thyme
  • 1 medium, sliced zucchini
  • 1 cup frozen green beans

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Season the beef with salt and black pepper. Sear the beef in batches until browned on all sides. Remove and set aside.

Step 3

In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until the onion is translucent.

Step 4

Add chopped celery and carrot. Cook for another 5 minutes until slightly softened.

Step 5

Stir in the sliced mushrooms and cook until they release their moisture, about 4 minutes.

Step 6

Add the beef back to the pot along with the beef broth, tomato paste, Worcestershire sauce, bay leaves, and fresh thyme.

Step 7

Bring the mixture to a boil, then lower the heat to simmer. Cover the pot and cook for 1 hour, stirring occasionally.

Step 8

After 1 hour, add sliced zucchini and frozen green beans to the pot. Continue to simmer for another 30 minutes, or until the beef is tender.

Step 9

Remove the bay leaves. Check seasoning and adjust salt and pepper if needed.

Step 10

Serve hot in individual bowls, garnished with fresh herbs if desired.
