  • 3 celery ribs, sliced
  • 8 ounces mushrooms, sliced
  • 1 zucchini, diced
  • 4 cups beef broth
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme, dried
  • 2 tablespoons parsley, finely chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.

Add the cubed beef to the pot in batches to avoid overcrowding, browning each piece on all sides. Remove beef and set it aside.
