Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 0.5 cup onion
  • 2 cloves garlic
  • 2 tablespoons taco seasoning (sugar-free)
  • 0.25 cup beef broth
  • 1 cup shredded cheddar cheese
  • 8 leaves large lettuce leaves
  • 0.5 cup sour cream
  • 1 medium avocado
  • 0.5 cup cherry tomatoes
  • 1 sliced jalapeño
  • 2 tablespoons fresh cilantro

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

Add the onion and garlic to the skillet and sauté for about 2 minutes until the onion becomes translucent.

Step 4

Add the ground beef to the skillet. Cook and crumble until it is browned and no longer pink, about 5-7 minutes.

Step 5

Drain any excess fat from the skillet.

Step 6

Stir in taco seasoning and pour in the beef broth. Let it simmer for another 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

Step 7

While the beef is cooking, prepare the toppings: Dice the avocado and cherry tomatoes, and slice the jalapeño.

Step 8

Lay each lettuce leaf onto a serving plate. This will serve as the taco shell substitute.

Step 9

Spoon the beef mixture into each lettuce leaf, then top with shredded cheddar cheese.

Step 10

Add a dollop of sour cream and a sprinkle of avocado, cherry tomatoes, and jalapeño slices.

Step 11

Garnish with fresh cilantro. Serve immediately to enjoy the crispy texture.
