Ingredients

  • 2 tablespoons Olive oil
  • 1 pound Beef chuck or stew meat
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Curry powder
  • 1.5 cups Coconut milk
  • 1 cup Beef broth
  • 4 cups Cauliflower rice
  • 0.25 cup Cilantro, chopped
  • 1 Lime, sliced

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef with salt and pepper, then add to the pot. Brown the meat on all sides, working in batches if necessary. Remove from the pot and set aside.

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until soft, about 5 minutes.
