Ingredients

  • 1 pound ground beef
  • 0.5 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 2 cups cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 0.5 cup sour cream
  • 0.25 cup sliced black olives
  • 0.5 cup cherry tomatoes, quartered
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 2 tablespoons cilantro, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large skillet, heat over medium-high heat and add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Step 3

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3 minutes.

Step 4

Stir in the taco seasoning, mixing well to coat the beef mixture. Remove from heat.

Step 5

On the prepared baking sheet, spread a thick and even layer of shredded cheddar and mozzarella cheeses to form a base.

Step 6

Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and starts to turn golden, forming a crispy layer.

Step 7

Remove the cheese layer from the oven. Let it cool for a minute, then carefully slide it onto a serving platter or leave it on the parchment paper.

Step 8

Spread the cooked beef mixture evenly over the cheese base.

Step 9

Top with sliced olives, quartered cherry tomatoes, sliced jalapeño, diced avocado, and a dollop of sour cream.

Step 10

Garnish with chopped cilantro and optionally some more cheddar cheese.

Step 11

Serve immediately while the cheese is crisp and enjoy your keto beef nachos!
