Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.5 cups Unsalted butter
  • 1 large Egg
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Cold water
  • 1 pound Ground beef
  • 1 small Onion
  • 1 small Zucchini
  • 0.5 medium Red bell pepper
  • 2 minced Garlic cloves
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley
  • 1 beaten Egg

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, and salt.

Step 3

Cut the unsalted butter into small cubes and add it to the flour mixture. Use your fingers to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs.

Step 4

In a small bowl, beat 1 large egg and stir in apple cider vinegar and cold water. Add this to the flour and butter mixture and mix until a dough forms. Wrap this dough in plastic wrap and refrigerate for at least 20 minutes.

Step 5

Meanwhile, heat olive oil in a large skillet over medium heat. Add the finely chopped onion, minced garlic, and diced red bell pepper. Sauté for 5 minutes or until vegetables are softened.

Step 6

Add the ground beef to the skillet and cook until browned, about 7-8 minutes. Drain any excess fat.

Step 7

Add the diced zucchini to the beef mixture and season with salt and black pepper. Cook for an additional 3 minutes, then stir in chopped parsley. Remove from heat and let it cool slightly.

Step 8

Roll out the chilled dough between two sheets of parchment paper to about 1/8-inch thickness. Cut out circles using a 6-inch plate as a guide.

Step 9

Place about 2 tablespoons of the beef mixture on one half of each dough circle, leaving an edge for sealing.

Step 10

Fold the dough over the filling to create a semicircle. Press the edges with a fork to seal.

Step 11

Brush the pasties with the beaten egg for a golden finish.

Step 12

Place the pasties on the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until they are golden brown.

Step 13

Let the pasties cool slightly on a wire rack before serving. Enjoy your delicious keto-friendly beef and vegetable pasties!
