Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, chopped
  • 3 cloves garlic cloves, minced
  • 2 medium beetroot, peeled and diced
  • 2 stalks celery stalks, chopped
  • 4 cups beef broth
  • 2 leaves bay leaves
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup sour cream, for serving

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then add them to the pot. Brown the beef on all sides, about 5-7 minutes.

Remove the browned beef from the pot and set aside.

Step 4

In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
