  • 4 pieces Almond flour tortillas
  • 1 cup Cooked black soybeans
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Avocado oil
  • 0.5 cup Diced onion
  • 0.5 cup Diced bell pepper
  • 1 tablespoon Taco seasoning
  • 2 tablespoons Chopped fresh cilantro
  • 0.25 cup Sour cream
  • 1 piece Sliced avocado

Directions

Step 1

Heat 1 tablespoon of avocado oil in a skillet over medium heat.

Step 2

Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.

Step 3

Stir in the cooked black soybeans and taco seasoning, and cook for an additional 2 minutes, heating through.

Step 4

Remove the bean mixture from the skillet and set aside.

Step 5

Wipe the skillet clean and add the remaining tablespoon of avocado oil.
