Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

  • 1 15 oz can of black soybeans, drained and rinsed
  • 1 14.5 oz can diced tomatoes with green chilies
  • 1 cup green enchilada sauce
  • 2 cups shredded cheddar cheese
  • 6 small low-carb tortillas
  • 1 tablespoon chopped cilantro
  • 1 cup sour cream

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Add the chopped onion and cook until translucent, about 5 minutes.

Step 4

Stir in the minced garlic, ground cumin, and chili powder, cooking for an additional minute until fragrant.

Add the drained and rinsed black soybeans and the diced tomatoes with green chilies to the skillet, stirring to combine.
