Ingredients

  • 4 pieces Low-carb tortillas
  • 1 cup Canned black soybeans, drained and rinsed
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Cream cheese, softened
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro, chopped
  • 1 large Avocado, sliced

Directions

Step 1

In a medium skillet, heat the olive oil over medium heat.

Add the drained black soybeans and cook for 2-3 minutes, stirring occasionally.

Add cumin powder, chili powder, garlic powder, salt, and black pepper to the skillet. Stir well to combine and cook for another 2 minutes.
