  • 30 grams Coconut flour
  • 100 grams Erythritol
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 150 grams Unsalted butter, softened
  • 2 teaspoons Vanilla extract
  • 6 large Egg yolks
  • 6 large Egg whites
  • 120 grams Cream cheese, softened
  • 150 grams Dark chocolate (85% cacao or higher), melted

Directions

Step 1

Preheat your oven to 200°C (392°F) and prepare a springform pan by lining it with parchment paper.

Step 2

In a bowl, sift together the almond flour, coconut flour, erythritol, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter until light and fluffy. Add the vanilla extract and mix well.

Add the egg yolks, one at a time, to the butter mixture, beating well after each addition.

Incorporate the softened cream cheese and continue to beat until the mixture is smooth.
