Ingredients

  • 200 grams Cabbage, shredded
  • 50 grams Carrot, grated
  • 100 grams Zucchini, grated
  • 2 large Eggs
  • 2 tablespoons Coconut flour
  • 2 tablespoons Almond flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper, ground
  • 100 milliliters Coconut oil, for frying

Directions

Step 1

In a large bowl, combine the shredded cabbage, grated carrot, and grated zucchini.

Step 2

In a separate bowl, beat the eggs and then add coconut flour, almond flour, baking powder, garlic powder, onion powder, salt, and black pepper. Mix well until there is no lump.

Step 3

Pour the egg mixture over the vegetables and mix until the vegetables are evenly coated.

Step 4

Heat coconut oil in a non-stick frying pan over medium-high heat. You want enough oil to generously coat the bottom of the pan.

Once the oil is hot, use a spoon to scoop a portion of the vegetable mixture into the pan and flatten it gently with the back of the spoon. Repeat until the pan is comfortably filled without overcrowding the fritters.

Step 6

Cook the fritters for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat if necessary to avoid burning.

Once cooked, remove the fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.

Repeat the frying process with the remaining vegetable mixture.
