Ingredients

  • 3 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cloves Garlic cloves, minced
  • 1 medium Onion, chopped
  • 14 ounces Crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon Red pepper flakes
  • 1 cup Ricotta cheese
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a spiralizer, create zucchini noodles from the zucchini and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Season with salt and black pepper.

Step 4

Add minced garlic and chopped onion to the skillet with the beef. Cook for an additional 3 minutes until the onions are translucent.

Step 5

Stir in the crushed tomatoes, Italian seasoning, and red pepper flakes. Simmer for 10 minutes, allowing the sauce to thicken slightly.

In a medium mixing bowl, combine ricotta cheese and half of the Parmesan cheese.

Repeat the layers with the remaining zucchini noodles, meat sauce, ricotta mixture, mozzarella, and the remaining Parmesan cheese.

Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
