Ingredients

  • 4 pieces halibut fillets
  • 2 tablespoons olive oil
  • 1 whole lemon
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 2 whole garlic cloves
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the halibut fillets under cold water and pat them dry with paper towels.

Step 3

Place the halibut fillets on a large baking sheet lined with parchment paper.

Step 4

Drizzle the olive oil evenly over the fillets.

Step 5

Grate the zest from the lemon and then halve the lemon. Sprinkle the zest over the fish and set the lemon aside.

Step 6

In a small bowl, finely chop the fresh parsley and dill, and mince the garlic cloves.

Step 7

Mix the chopped herbs and garlic together, then sprinkle the mixture evenly over the halibut fillets.

Step 8

Season the fillets with sea salt and black pepper.

Step 9

Squeeze the juice from half of the lemon over the fillets, saving the other half for garnishing.

Step 10

Bake the halibut in the preheated oven for 18-20 minutes, or until the fish flakes easily with a fork.

Step 11

Remove the halibut from the oven and let it rest for a few minutes before serving.

Step 12

Garnish with extra lemon slices and fresh parsley if desired, then serve immediately.
