Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 0.5 cup Butter
  • 0.5 cup Granulated erythritol
  • 8 oz Cream cheese
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 4 large Eggs
  • 2 tablespoons Powdered erythritol

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium-sized mixing bowl, combine almond flour, coconut flour, and granulated erythritol.

Step 3

Melt the butter and mix it into the dry ingredients until it forms a crumbly dough.

Step 4

Press the dough into the bottom of an 8x8-inch baking dish lined with parchment paper. Use a flat-bottomed cup to press it evenly.

Step 5

Bake the crust for 10 minutes until lightly golden. Remove from the oven and set aside to cool.

Step 6

In a large bowl, beat the cream cheese until soft and creamy.

Step 7

Add heavy cream and vanilla extract to the cream cheese, mixing until well combined.

Step 8

Add eggs, one at a time, beating each until fully incorporated.

Step 9

Pour the cream cheese mixture over the baked crust.

Step 10

Bake in the preheated oven for 30 minutes, or until the custard is set but slightly jiggly in the center.

Step 11

Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.

Step 12

Before serving, sift powdered erythritol over the top for a dusted effect.

Step 13

Cut into slices and serve chilled.
