Ingredients

  • 2 tablespoons Coconut flour
  • 0.25 teaspoons Baking powder
  • 4 large Eggs
  • 2 tablespoons Butter
  • 4 slices Cooked bacon
  • 0.5 cup Cheddar cheese
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 as needed Olive oil or cooking spray

Directions

Step 1

In a small bowl, combine the coconut flour, baking powder, and a pinch of salt. Mix well.

Step 2

In another bowl, beat 2 eggs and add in the melted butter. Stir the wet ingredients into the dry ingredients until well blended.

Step 3

Grease a large microwave-safe mug or bowl with olive oil or cooking spray. Pour in the mixture and microwave on high for 90 seconds to 2 minutes, or until the mixture is cooked through.

Step 4

Let it cool briefly, then carefully remove the coconut flour 'bread' from the mug and slice it in half horizontally to create two rounds.

Step 5

In a small non-stick skillet, cook the remaining 2 eggs sunny side up or scrambled, as preferred. Season with salt and black pepper.
