Ingredients

  • 3 tablespoons Almond flour
  • 1 teaspoon Coconut flour
  • 1 teaspoon Baking powder
  • 2 large Egg
  • 2 tablespoons Butter
  • 2 slices Shredded cheddar cheese
  • 2 slices Bacon
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Water
  • 1 teaspoon Olive oil

Directions

Step 1

In a microwave-safe ramekin, combine the almond flour, coconut flour, baking powder, and a pinch of salt.

Step 2

Add 1 tablespoon of melted butter and 1 egg to the ramekin, stirring well until a smooth batter forms.

Step 3

Microwave the mixture on high for 90 seconds, or until the muffin is cooked through and firm to the touch. Carefully remove from the ramekin and slice in half horizontally.

Step 4

In a frying pan over medium heat, add the olive oil. Fry the bacon slices until crispy, about 4-5 minutes per side. Remove bacon and set aside.
