Ingredients

  • 2 cups Almond flour
  • 1 teaspoon Baking powder
  • 4 tablespoons Cream cheese
  • 2 cups Mozzarella cheese
  • 4 large Egg
  • 8 slices Bacon
  • 4 slices Cheddar cheese
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for 1 minute, stir, then continue to microwave in 30-second intervals until completely melted.

Step 3

Add almond flour, baking powder, and one egg to the melted cheese mixture. Mix until a dough forms. It may be sticky; if so, wet your hands slightly to shape it.

Divide the dough into four equal portions. Shape each into a croissant form by creating a triangle and rolling up from the widest part toward the tip.

Place the croissants on the prepared baking sheet and bake for 15 minutes or until golden.

Meanwhile, in a frying pan, cook the bacon slices over medium heat until crispy. Remove and set aside.
