Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for 1 minute, stir, then continue to microwave in 30-second intervals until completely melted.
Add almond flour, baking powder, and one egg to the melted cheese mixture. Mix until a dough forms. It may be sticky; if so, wet your hands slightly to shape it.
Divide the dough into four equal portions. Shape each into a croissant form by creating a triangle and rolling up from the widest part toward the tip.
Place the croissants on the prepared baking sheet and bake for 15 minutes or until golden.
Meanwhile, in a frying pan, cook the bacon slices over medium heat until crispy. Remove and set aside.
In the same frying pan, add butter and melt over medium heat. In a bowl, whisk the remaining three eggs with salt and pepper, then pour them into the pan to scramble.
To assemble, slice open the cooled croissants, place two slices of bacon, a quarter of the scrambled eggs, and one slice of cheddar cheese inside each.
