Ingredients

  • 2 tablespoons Almond flour
  • 1 tablespoon Coconut flour
  • 0.5 teaspoon Baking powder
  • 1 pinch Salt
  • 3 whole Eggs
  • 1 tablespoon Whole milk
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Cheddar cheese, shredded
  • 2 slices Bacon
  • 1 teaspoon Avocado oil
  • 0 to taste Pepper

Directions

Step 1

In a small bowl, combine almond flour, coconut flour, baking powder, and a pinch of salt.

Step 2

Melt 1 tablespoon of unsalted butter and add it to the dry ingredients along with 1 egg and 1 tablespoon of whole milk. Stir until the mixture is well combined.

Step 3

Transfer the mixture into a microwave-safe ramekin or mug. Microwave on high for 90 seconds. Let cool slightly, then slice in half to create two 'bun' halves.

Step 4

Heat a small non-stick frying pan over medium heat and add the avocado oil.

Step 5

Crack the remaining 2 eggs into the pan, season with a pinch of salt and pepper, and cook until whites are set, about 2-3 minutes. Flip and cook for another minute to cook the yolk if desired.

Step 6

In a separate pan, cook the bacon slices until crispy, about 5 minutes. Remove and set on a paper towel to drain excess fat.

Step 7

In the same pan used for eggs, quickly toast the inside of the keto buns until golden, about 1 minute per side.

Step 8

To assemble, place one bun half on a plate, top with half the shredded cheddar cheese, followed by the eggs, bacon, and the remaining cheese. Top with the other bun half.
