Ingredients

  • 6 medium Green bell peppers
  • 3 whole Habanero peppers
  • 1 large Onion
  • 1 cup Palm oil
  • 1 pound Beef (cubed)
  • 2 tablespoons Ground crayfish
  • 1 teaspoon Ground turmeric
  • 2 tablespoons Locust bean (iru)
  • 1 teaspoon Salt
  • 2 cubes Beef bouillon cubes
  • 3 cloves Garlic cloves
  • 1 teaspoon Ginger
  • 2 cups Water

Directions

Step 1

Deseed and roughly chop the green bell peppers. Remove stems from the habanero peppers.

Step 2

In a blender, add the green bell peppers, habanero peppers, garlic cloves, ginger, and one cup of water. Blend until smooth.

Step 3

In a large pot over medium heat, pour in the palm oil and allow it to heat up for about 5 minutes, until it becomes clear.

Step 4

While the oil is heating, finely chop the onion and lightly sauté in a separate pan for 3-5 minutes. Set aside.

Step 5

Add the beef cubes to the pot with the hot palm oil and fry until browned on all sides, about 8-10 minutes.

Step 6

Pour the blended pepper mixture into the pot, stirring to combine with the beef. Add the sautéed onions.

Step 7

Add the ground crayfish, ground turmeric, locust bean (iru), salt, beef bouillon cubes, and remaining cup of water. Stir well.

Step 8

Reduce the heat to low and cover the pot. Allow the stew to simmer for about 40 minutes, stirring occasionally.

Step 9

Adjust the seasoning with more salt if needed. Continue to simmer until the oil has floated to the top and the sauce has thickened.

Step 10

Serve hot with cauliflower rice or your preferred low-carb side.
