Ingredients

  • 500 grams Chicken breast
  • 2 tablespoons Coconut oil
  • 4 pieces Shallots
  • 3 pieces Garlic cloves
  • 2 pieces Red chili peppers
  • 3 pieces Kaffir lime leaves
  • 1 stalk Lemongrass
  • 1 inch Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 300 ml Water

Directions

Step 1

Place the chicken breast in a pot and cover with 300 ml of water. Bring to a boil over medium heat, then reduce to a simmer and poach for 12-15 minutes, or until the chicken is fully cooked.

Step 2

Remove the chicken from the pot, let it cool slightly, then shred it using two forks and set aside.

Step 3

In a pan, heat 2 tablespoons of coconut oil over medium heat. Add the sliced shallots and minced garlic, sauté until fragrant and golden brown.

Add sliced red chili peppers, thinly sliced ginger, turmeric powder, and crushed lemongrass (discarding the hard ends) to the pan. Stir fry the spices for about 3 minutes to release their aromas.

Add the kaffir lime leaves, tearing them slightly to release their scent, followed by the shredded chicken. Stir well to coat the chicken with the spice mixture.

Season the chicken with salt and black pepper, ensuring even distribution. Continue to stir fry the mixture for an additional 5-7 minutes on medium heat.

Finally, drizzle lime juice over the chicken and toss everything well for a balanced flavor.
