  • 6 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons coconut oil
  • 8 pieces red chilies, seeded
  • 4 pieces bird’s eye chilies
  • 6 pieces shallots
  • 4 pieces garlic cloves
  • 1 inch piece ginger, peeled
  • 2 stalks lemongrass, white part only, chopped
  • 1 teaspoon turmeric powder
  • 3 pieces lime leaves
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Begin by preparing the chicken. Rinse the chicken thighs and pat them dry with paper towels.

Step 2

In a food processor, combine red chilies, bird’s eye chilies, shallots, garlic, ginger, chopped lemongrass, and turmeric powder. Blend until you have a smooth paste.

In a large pan or wok, heat the coconut oil over medium-high heat.

Add the spice paste to the pan and sauté for about 5-7 minutes until fragrant and slightly darker in color.

Add the chicken thighs to the pan and stir to coat them well with the spice paste. Cook for another 5 minutes, allowing the chicken to sear slightly.
