  • 4 pieces Chicken thighs, bone-in and skin-on
  • 2 tablespoons Coconut oil
  • 1 medium Yellow onion, finely chopped
  • 4 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cayenne pepper
  • 1 tablespoon Paprika
  • 1 cup Chicken broth
  • 2 tablespoons Coconut aminos
  • 1 teaspoon Stevia or erythritol sweetener
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lime juice
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat the coconut oil in a large skillet over medium-high heat.

Step 2

Season the chicken thighs with salt and black pepper. Once the oil is hot, add the chicken thighs skin-side down. Cook until the skin is golden and crispy, about 6-7 minutes.

Flip the chicken and cook for another 5 minutes, then remove from the pan and set aside.
