Ingredients

  • 8 pieces Chicken drumsticks
  • 1 cup Coconut flour
  • 500 ml Coconut oil
  • 1 tablespoon Turmeric powder
  • 1 tablespoon Ground coriander
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Fennel seeds
  • 2 tablespoons Ginger, minced
  • 3 cloves Garlic, minced
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 10 leaves Curry leaves
  • 2 large Eggs

Directions

Step 1

In a large mixing bowl, combine turmeric powder, ground coriander, chili powder, cumin powder, fennel seeds, minced ginger, minced garlic, salt, and black pepper.

Step 2

Add the chicken drumsticks to the bowl and rub the spice mixture all over them until well-coated. Let it marinate for at least 30 minutes, or overnight for best results.

Step 3

Beat the eggs in a separate bowl and dip each marinated chicken drumstick into the beaten eggs.

Step 4

Place the coconut flour in another bowl and roll the egg-coated chicken in the coconut flour to form a light crust.

Step 5

Heat the coconut oil in a deep frying pan over medium heat. Once hot, add the curry leaves to the oil first, allowing them to sizzle and infuse the oil with their aroma.

Step 6

Carefully add the chicken drumsticks to the pan, ensuring they are not overcrowded. Fry them for about 8-10 minutes on each side, or until the chicken is cooked through and the outside is golden and crispy.

Step 7

Transfer the fried chicken to a plate lined with paper towels to drain any excess oil.

Step 8

Serve hot with a side of fresh salad or your favorite low-carb dipping sauce.
