Ingredients

  • 8 pieces Chicken thighs (bone-in, skin-on)
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Cayenne pepper
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 0.5 cup Coconut flour
  • 2 large Eggs, beaten
  • 0.5 cup Coconut oil
  • 4 wedges Lime wedges
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

In a large mixing bowl, combine minced garlic, grated ginger, turmeric powder, coriander powder, cumin powder, cayenne pepper, salt, black pepper, and lemon juice. Mix well to form a marinade.

Step 2

Add the chicken thighs to the bowl, ensuring they are thoroughly coated with the marinade. Cover and let it sit in the refrigerator for at least 1 hour or overnight for better flavor penetration.

Step 3

Once the chicken is marinated, prepare a breading station. Place coconut flour in one shallow dish and beaten eggs in another.

Step 4

Heat the coconut oil in a large skillet over medium-high heat.

Step 5

Take each marinated chicken thigh, dip it first in the coconut flour, ensuring it's fully coated, then dip it into the beaten eggs, and finally, give it another coating of coconut flour.

Step 6

Carefully place the coated chicken thighs in the hot oil and fry each side for about 8-10 minutes, or until the chicken is cooked through and the coating is golden and crispy.

Step 7

Once fried, transfer the chicken to a plate lined with paper towels to drain any excess oil.

Step 8

Serve the Keto Ayam Goreng hot, garnished with fresh cilantro and lime wedges for squeezing.
