Ingredients

  • 500 grams Boneless chicken thighs
  • 2 tablespoons Coconut oil
  • 1 large Egg
  • 100 grams Almond flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Xylitol or Erythritol
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Tomato paste
  • 2 tablespoons Soy sauce
  • 0.5 teaspoon Red chili flakes
  • 100 milliliters Water
  • 1 medium, chopped Green bell pepper
  • 1 medium, chopped Red bell pepper
  • 3 stalks, chopped Spring onions

Directions

Step 1

Cut the chicken thighs into bite-sized pieces.

Step 2

In a bowl, whisk the egg and set it aside.

Step 3

In another bowl, mix almond flour, salt, black pepper, and garlic powder.

Step 4

Dip the chicken pieces into the egg and then coat them with the almond flour mixture.

Step 5

Heat 1 tablespoon of coconut oil in a large pan over medium-high heat.

Step 6

Add the chicken pieces in a single layer and fry until golden and cooked through, about 6-8 minutes per side. Cook in batches if necessary.

Step 7

Remove chicken and set aside on a plate lined with paper towels to drain excess oil.

In the same pan, add the remaining tablespoon of coconut oil.

Sauté the chopped green and red bell peppers until slightly softened, about 3-4 minutes.

Return the chicken to the pan, tossing to coat them evenly with the sauce.

Garnish with chopped spring onions before serving.

Serve hot with cauliflower rice or zucchini noodles for a complete keto meal.
