  • 1 head Cauliflower
  • 100 grams Cream cheese
  • 2 tablespoons Rice vinegar
  • 4 sheets Nori sheets
  • 1 large Avocado
  • 1 small Cucumber
  • 2 tablespoons Soy sauce
  • 2 tablespoons Sesame seeds
  • 0.5 teaspoon Salt

Directions

Step 1

Begin by preparing the cauliflower rice. Remove the leaves and stems from the cauliflower and cut into florets. Using a food processor, pulse the florets until they resemble rice-like granules.

Step 2

Transfer the processed cauliflower to a microwave-safe bowl. Microwave on high for 5 minutes, or until the cauliflower is tender. Let it cool slightly.

Step 3

Once the cauliflower is cool enough to handle, place it in a clean kitchen towel and squeeze out as much moisture as possible. This step is important to ensure the 'rice' holds together well.

Step 4

In a large bowl, mix the cauliflower rice with cream cheese, rice vinegar, and salt. Stir until the mixture is well combined and sticky.

Peel and slice the avocado and cucumber into long strips.
