Ingredients

  • 1 cup Unsweetened almond milk
  • 2 cups Heavy cream
  • 0.5 cup Erythritol sweetener
  • 0.5 cup Hazelnut butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 4 large Egg yolks
  • 0.5 cup Chopped toasted hazelnuts

Directions

Step 1

In a medium saucepan, combine the almond milk, heavy cream, and erythritol sweetener.

Step 2

Heat the mixture over medium heat until it is hot but not boiling, stirring occasionally to dissolve the sweetener.

Step 3

In a separate bowl, whisk together the hazelnut butter, vanilla extract, sea salt, and egg yolks.

Step 4

Slowly add a half-cup of the hot cream mixture into the bowl with the yolks while constantly whisking to temper the eggs.

Step 5

Pour the egg mixture back into the saucepan with the remaining cream mixture.

Step 6

Continue to cook on low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes.

Remove from heat and allow the custard to cool to room temperature. Then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.

Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions.

During the last few minutes of churning, add the chopped toasted hazelnuts.

Transfer the ice cream to a lidded container and freeze until firm, about 2-3 hours.
