Ingredients

  • 2 pounds boneless pork shoulder
  • 4 pieces dried guajillo chilies
  • 2 pieces dried ancho chilies
  • 0.5 cup white vinegar
  • 0.5 cup orange juice (freshly squeezed)
  • 0.25 cup lime juice
  • 4 cloves garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 2 tablespoons avocado or coconut oil (for cooking)
  • 0.25 cup cilantro (optional for garnish)
  • 0.25 cup radish slices (optional for garnish)
  • 4 pieces lime wedges (optional for garnish)

Directions

Step 1

Cut pork shoulder into 1/2-inch thick slices.

Step 2

Toast guajillo and ancho chilies in a dry skillet over medium heat for about 2 minutes, or until they are fragrant. Be careful not to burn them.

Remove seeds and stems from the chilies. Place the chilies in a bowl and cover with hot water. Let them soak for 20 minutes to soften.

Drain the chilies and add to a blender along with white vinegar, orange juice, lime juice, garlic cloves, oregano, cumin, salt, black pepper, and smoked paprika.
