Ingredients

  • 2 tablespoons Chia seeds
  • 1 cup Unsweetened shredded coconut
  • 1 cup Chopped walnuts
  • 0.5 cup Chopped pecans
  • 0.5 cup Flaxseed meal
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 0.5 cup Erythritol sweetener
  • 0.5 cup Butter, melted
  • 2 large Eggs, lightly beaten

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with parchment paper cups.

Step 2

In a large mixing bowl, combine the almond flour, chia seeds, shredded coconut, chopped walnuts, chopped pecans, flaxseed meal, baking powder, and salt. Mix these dry ingredients together until they are well combined.

In a separate bowl, whisk together the vanilla extract, almond extract, erythritol sweetener, melted butter, and lightly beaten eggs.
