Ingredients

  • 2 large Aubergines
  • 60 grams Tahini
  • 30 ml Lemon juice
  • 2 medium Garlic cloves
  • 30 ml Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Pomegranate seeds

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and dry the aubergines. Prick them several times with a fork to allow steam to escape.

Step 3

Place the aubergines on a baking sheet and roast in the preheated oven for about 40-45 minutes, or until the skin is charred and the flesh is soft.

Step 4

Once roasted, remove the aubergines from the oven and let them cool for a few minutes.

While the aubergines are cooling, finely chop the fresh parsley.

Peel the roasted aubergines and place the flesh in a large bowl. Discard the skins.
