Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 tablespoons Olive oil
  • 1 cup Hot water

Directions

Step 1

In a large mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt. Mix well to ensure there are no lumps in the dry ingredients.

Step 2

Add the olive oil to the dry ingredients and mix until well incorporated.

Step 3

Gradually add hot water to the mixture, stirring continuously with a spatula until a dough begins to form.

Step 4

Using your hands, knead the dough for a few minutes in the bowl until it is smooth and elastic. If the dough feels too dry, add a little more hot water, one tablespoon at a time, until desired consistency is achieved.

Step 5

Divide the dough into 8 equal parts and roll each into a ball.

Place a piece of parchment paper on your work surface and set a dough ball on it. Place another piece of parchment paper on top of the dough ball and gently flatten it with a rolling pin until it forms a thin, round tortilla.

Preheat a non-stick skillet or a cast-iron pan over medium heat.

Once hot, peel the top layer of parchment paper and carefully lift the tortilla with the bottom paper attached to it. Transfer it to the skillet by peeling the remaining parchment paper off.

Cook the tortilla for about 1-2 minutes on one side, or until bubbles form on the surface and the edges begin to lift. Flip it and cook for an additional minute on the other side.

Repeat steps 6-9 with the remaining dough balls.
