Ingredients

  • 100 grams Almonds
  • 100 grams Walnuts
  • 100 grams Hazelnuts
  • 50 grams Coconut flour
  • 50 grams Chia seeds
  • 500 ml Almond milk
  • 100 grams Erythritol
  • 1 Cinnamon stick
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange peel
  • 100 grams Pomegranate seeds
  • 200 grams Unsweetened whipped cream
  • 50 grams Pistachios

Directions

Step 1

Start by roasting the almonds, walnuts, and hazelnuts in a preheated oven at 180°C (350°F) for about 10 minutes or until fragrant.

Step 2

Allow the nuts to cool slightly, then roughly chop them and set aside.

Step 3

In a large saucepan, combine the almond milk, erythritol, and cinnamon stick. Heat over medium heat, stirring occasionally, until the erythritol is fully dissolved.

Step 4

Add the coconut flour and stir to combine. Continue to simmer gently for 5 minutes, allowing it to thicken slightly.

Step 5

Remove the cinnamon stick and add the chopped almonds, walnuts, hazelnuts, chia seeds, vanilla extract, and orange peel to the mixture.

Step 6

Cook over low heat for another 20 minutes, stirring frequently to prevent sticking and to ensure even distribution of ingredients.

Step 7

Once the mixture has thickened to a porridge-like consistency, remove it from the heat and let it cool for 10 minutes.

Step 8

Spoon the Asure into serving bowls and refrigerate for at least 1 hour to allow it to set.

Step 9

Just before serving, top each bowl with a dollop of unsweetened whipped cream and sprinkle with pomegranate seeds and chopped pistachios.

Step 10

Serve chilled, and enjoy this delightful keto-friendly version of Noah's Pudding!
