Ingredients

  • 500 g fresh asparagus
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 large eggs
  • 120 ml heavy cream
  • 120 g almond flour
  • 60 g grated Parmesan cheese
  • 100 g mozzarella cheese, shredded
  • 1 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F). Lightly grease a pie pan and set it aside.

Step 2

Rinse the asparagus and trim the tough ends. Cut spears into bite-sized pieces.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of butter and the olive oil.

Add minced garlic to the skillet and sauté for about 1 minute until fragrant.

Add the asparagus to the skillet, season with a pinch of salt and black pepper, and cook until it is lightly steamed and tender, approximately 5 minutes. Set aside.
