Ingredients

  • 1 cup almond flour
  • 0.25 cup coconut flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.25 cup unsalted butter, melted
  • 0.5 cup warm water
  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck roast
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 large bell pepper, sliced
  • 1 teaspoon cumin

  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a large bowl, combine almond flour, coconut flour, baking powder, and salt.

Step 3

In a separate bowl, whisk together eggs, melted butter, and warm water.

Step 4

Slowly mix the wet ingredients into the dry ingredients until a dough forms.

Step 5

Let the dough rest for 5 minutes.

Step 6

Divide the dough into 4 equal parts and shape them into round patties, about 1/2 inch thick.

Step 7

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 8

Fry arepa patties for 3-4 minutes on each side, until golden. Set aside.

Step 9

Season the beef chuck roast with salt, cumin, and paprika.

Step 10

Heat the remaining olive oil in an oven-safe pot over medium-high heat.

Step 11

Add the beef and sear on all sides until browned. Remove the beef and set aside.

Step 12

In the same pot, add sliced onion, garlic, and bell pepper. Sauté until onions are soft.

Step 13

Stir in the beef broth, tomato paste, and apple cider vinegar, scraping any browned bits from the bottom.

Step 14

Return the beef to the pot, cover, and transfer to the preheated oven.

Step 15

Cook for 3-4 hours until the beef is tender and can be easily shredded with a fork.

Step 16

Remove the beef from the pot and shred using two forks.

Step 17

Mix the shredded beef back into the sauce and let it simmer for another 5-10 minutes.

Step 18
