Ingredients

  • 2 medium Chayote squash
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cinnamon
  • 3 tablespoons Erythritol sweetener
  • 2 tablespoons Butter
  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 3 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Peel and core the chayote squash. Cut into small cubes resembling apple pieces.

Step 3

In a medium saucepan over medium heat, combine chayote cubes, lemon juice, cinnamon, erythritol sweetener, and butter.

Cook for 10 minutes until chayote becomes tender and resembles cooked apple texture. Set aside to cool.

In a large bowl, mix together almond flour, coconut flour, xanthan gum, baking powder, and salt.
