Ingredients

  • 150 grams Almond flour
  • 100 grams Unsweetened shredded coconut
  • 60 grams Erythritol
  • 100 grams Butter
  • 2 tablespoons Unsweetened almond butter
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 2 tablespoons Boiling water
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, shredded coconut, erythritol, and salt.

Step 3

In a small saucepan over low heat, melt the butter. Add the almond butter and vanilla extract, stirring until smooth and well combined.

Step 4

In a small bowl, dissolve the baking soda in the boiling water and then pour it into the melted butter mixture. Stir until it begins to froth.

Step 5

Pour the wet ingredients into the dry mixture and mix well until a firm dough forms.

Step 6

Roll small portions of dough (about the size of a tablespoon) into balls and place them onto the prepared baking sheet, leaving space for spreading. Gently flatten each ball slightly with your fingers or the back of a spoon.

Step 7

Bake in the preheated oven for about 10-12 minutes or until the biscuits are golden brown.

Step 8

Remove the biscuits from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy these keto-friendly Anzac biscuits with a cup of tea or coffee.
